CRAB CAKES

1 lb jumbo lump crabmeat
1 egg beatened
3/4 cup of plain breadcrumbs
2 tablespoons chopped parsley
3/4 cup mayonaise
3/4 teaspoon prepared mustard
1 teaspoon salt
3/4 teaspoon of Old Bay seasoning (Tony's or Zatarain's seasoning could be used)

Mix all ingredients and form patties the day before serving. Fry in about 1/4 inch of oil in a frying pan.
