TEQUILA-LIME SHRIMP

 

7 jumbo shrimp with head and shell still on
1 cup Tequila
1 lime zested and juiced
1 large tomato medium dice
½ small red onion sliced thin
1 bunch cilantro chopped roughly
1 tsp minced garlic
1 tbsp cooking oil
¾ cup unsalted butter
Salt and pepper to taste
1 medium skillet

Method:

In a medium skillet turn on to high heat, add the tbsp of cooking oil. Season the shrimp with salt and pepper be generous. Place all shrimp into the pan and cook 45 seconds per side. Then add red onions cook another minute. Leave the shrimp in the pan the whole time don’t take em out. Add garlic cook for 30 seconds then add tomato cook another 30 seconds. Then add tequila , watch the flame, reduce all the way down till there is just a little liquid left in the pan. Then start to add your butter, stirring constantly to incorporate the butter into the sauce. Finish with the lime zest and juice and the chopped cilantro, adjust seasoning with salt and pepper to taste.
