HOPE'S BLACKENED FISH FETTUCINI

1-1/2 lbs. of fish (Bass)     
2 small bell peppers      
2 stalks celery       
1-1/2 onion        
2 cloves of garlic
12 oz. medium egg noodles
1-1/2 blocks of butter
2 tlbsps. dry parsley
1/8 cup of plain flour
1/2 pint half-n-half
1 lb. jalapeno pepper cheese
American and parmesan cheese (to top dish)

Place butter in square microwavable dish and melt.
Add fish which has been seasoned with salt, pepper, and blackened fish seasoning, arrange fish single layer thick. Microwave on high for about 3 minutes, turn fish over and microwave for one minute more. Remove fish and set aside.
Use butter and saute celery, onions, and bell peppers in large cooking pan. Add parsley and garlic. Cook for 10 minutes. After 10 minutes, add flour, half-n-half and pepper cheese. After this has blendeded, continue to cook for 20 minutes longer. Cook noodles, drain and add to mixture. Put in a baking dish and top with American and parmesan cheese. Bake at 350 for approximately 20 minutes. (can be prepared ahead of time and baked later)
