DON'S FISH AND CREOLE TOMATO TACO

 

SALSA
Red onion
1 poblano pepper
1 red bell pepper
2 Creole tomatoes
1 bunch of cilantro (tops)         
2 tbsp's honey

Skin the onion, remove the seeds from the peppers-finely chop all. Chop tomatoes. Add tomatoes, onion & peppers to a hot skillet with a little oil. Sauté the veggies until soft. Chop cilantro. Add all into a bowl & stir in honey.

TACO SLAW
Bag of pre-cut Cole slaw veggies
Marie's Cole slaw dressing
Can of chipotle peppers in adobe sauce
Black pepper

Combine Cole slaw greens & slaw dressing to your liking. Finely chop 2 chipotle peppers and add to the slaw mixture, blend well folding in about 1/2 tsp of the adobe sauce.  Finish with a dash of black pepper.

MAYO
Tarter sauce
Can of chipotle peppers in adobe sauce (left over from making taco slaw)

Combine 2 full tbsp's tarter sauce with 1 tsp adobe sauce. Add 1 finely chopped chipotle pepper. Stir well.

FISH
Grill, fry, blacken, or bake any of you favorite fish (I prefer grilled or blackened red fish)

Microwave your favorite (I like flour) tortillas for 20 seconds between 2 paper plates or paper towels.

To prepare your taco, spread a generous amount of the mayo on a warm tortilla. Spoon some of the slaw & salsa in the center of the tortilla, and then add the flaked fish. Wrap to form a taco.
