CAPTAIN DUDLEY'S DEADLY REDFISH CAKES
Fillet any sized redfish removing all bones and any red flesh
Boil in waters seasoned with your favorite Cajun seasoning until fish starts to flake
Remove and drain in sink
Chop fish as fine as possible in large bowl
Add additional Cajun seasoning, generous black pepper, blended raw eggs, Italian bread crumbs, chopped celery and yellow and green onions
Mix well and shape into hamburger -like patties
Dip in breadcrumbs, then fry in olive oil until golden brown.
Serve with horseradish sauce mixed with ketchup.
