DON'S CRAWFISH RECIPE

Directions:

1. Mix 64 oz container of Deep South's Cajunland complete boil into pot of 7 gallons water (as on label instructions) I've done Zatarains, LA Fish Fry and others (all good products I have used) but Cajunland is the best just has a unique taste. You can find it at most Winn Dixies and Rouses.

2. Have potatoes in pot (already in strainer if you have one) when you light burner and bring to rolling boil. (Cajun Rocket Pot far superior to others, see my Outdoor mall this site.)

3. Add crawfish, just rinsed to get mud off no salt or purging that is a myth, it will kill them.

4. After it returns to a boil, time boil for 5 minutes.

5. After 5 minutes, shut off and let soak for thirty minutes.

6. While soaking add frozen or fresh corn, Brussels spouts, mushrooms, garlic, onions, lil' smokies , hot dogs, sausage or whatever you want to. The 30 minutes soak time is actually completing cooking, very important.

7. Drain, spread out and have fresh lemons if anyone want to squeeze over their portions.

8. Do not add any other seasonings or more salt, it doesn't need. Follow this and they will be perfect every time.

If I do more than one boil, I don't try to adjust the seasonings to the used. I simply start over from scratch, the stuff is too cheap to over or under season and salt.
