Ingredients

4 squirrels, disiointed
2 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped green pepper
2 cloves of garlic, minced
2 cup rice
3 tbsp chopped green onions
Salt and pepper to taste

Directions

Brown the squirrels in a dutch oven in about 1/2 cup hot oil. add the onions celery,green pepper and garlic and cook until the vegetables are tender. Add 3 1/2 cups water,rice,green onions,salt and pepper,then cover. simmer for about 1 hour or until the squirrel is tender.
