Over the years, Don has come across some truly phenomenal recipes for all types of fish and crustaceans found in the waters of Louisiana. |
GRILLED BACON WRAPPED REDFISHSubmitted by: Kimberly Oubre 1 lb bacon Cut bacon slices in halves. Cut redfish into small cubes. Season fish with salt and pepper to taste. Wrap bacon around each cube of fish and put a toothpick through it to hold it together. Cook on a barbecue pit, turning over to brown on both sides. While cooking, baste it with butter. After it's cooked put barbecue sauce on both sides and leave on grill for 5 minutes. Remove from grill and serve. |
